Caramel-Stuffed Snickerdoodles

Ingredients

  • 1½ cup sugar
  • ½ cup vegetable shortening
  • 4 oz. butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 ¾ cups flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • caramel cubes
  • cinnamon

Instructions

  • Add sugar, vegetable shortening, butter and mix.
  • Add eggs and vanilla extract while mixing
  • Sift flour, cream of tartar, baking soda and salt and add to wet mixture
  • Scoop out dough to make each cookie and flatten onto a baking sheet.
  • Fill each scoop of dough with a caramel cube and cover the top with dough.
  • Sprinkle cinnamon and sugar on top.
  • Bake for 14 minutes at 375 degrees and enjoy!
