Two 15-ounce cans salmon (drained), bones removed
2 eggs, beaten
2 medium-size cooked white potatoes, mashed
1/2 small onion, chopped
2 teaspoons flat-leaf parsley, chopped
Salt and pepper to taste
Vegetable oil for frying
- Mix all ingredients in a bowl.
- Using your hands, form 3-inch round patties.
- Brown patties on both sides in vegetable oil, using medium-high heat.
- Arrange on serving platter, and garnish with parsley.
