"Mom's Cooking": Meatloaf, Pea Salad, Angel Food Cake With Berries & Whipped Cream

Turkey Meatloaf

• 3 cloves minced garlic
• 2 medium onions, diced
• 1/2 red bell pepper, diced
• 1/2 yellow bell pepper, diced
• 1 green bell pepper, diced
• 48 oz. ground white turkey
• 4 eggs
• 1 1/2 old fashioned oatmeal
• 1/2 sleeve of unsalted crackers, crushed
• 3/4 cup of two percent low fat milk
• 1/2 tsp black pepper
• 2 tbsp Lawry's Perfect seasoning blend
• 1 29 oz can of Hunts Tomato Sauce

1. Preheat oven to 325 degrees.

2. Spray a 9x13 baking dish with cooking spray.

3. In a large bowl, add garlic, bell peppers, turkey meat, eggs, oatmeal, crushed crackers, milk, black pepper and seasoning. Mix all ingredients until thick. To make mixture thicker, add small amounts of oatmeal.

4. Shape the mixture into a loaf in the prepared baking dish.

5.Pour tomato sauce over the meatloaf and place in the oven at 325 degrees for 60 minutes.

Pea Salad

• 3 eggs, hard boiled
• 1 large onion, diced
• 2 14.5 oz cans green peas
• 3-4 tbsp light mayo
• Black pepper to taste
• Seasoning salt or Mrs. Dash, to taste

1. Drain two 12oz cans of peas into a medium bowl.

2. Finely chop one large onion and boiled eggs.

3. Combine peas onion and eggs and mix together with Light mayo to your desired thickness. (Approximately three spoons of mayo.)

4. Add black pepper seasoning and enjoy.

Angel Food Cake

• 1 Angel Food Cake from bakery
• 1 large container of cool whip, divided
• 2 14.5oz cans of crushed pineapple
• 1 pint of fresh strawberries, half sliced, half left whole
• 1/2 pint fresh blueberries

1. Drain the pineapple, and pat dry.

2. In a medium bowl, mix 1/2 the cool whip with the crushed pineapple and mix well. Reserve remaining cool whip for frosting.

3.Cut angel food cake into thirds widthwise. Separate the three layers, and place the smallest layer on the bottom of a plate.

4. Begin to layer filling on the bottom layer of cake. 5. Place middle layer of cake then spread more filling on top of the middle layer. Top with the last cake layer.

5. Frost entire cake with remaining cool whip and smooth with spatula.

6. Decorate cake with thinly sliced strawberries and blueberries.

7. Garnish the bottom with whole strawberries.

8. Place cake in fridge to cool and set for 45 minutes.
