Lamb Infused With Garlic and Pearl Onions


• 5 lb. bone in leg of lamb
• 4 cloves of crushed garlic for infusing within the lamb
• 2 tsp salt
• 1 tsp pepper
• 1 tsp cumin
• 1 tsp paprika
• 1 tsp oregano
• 1 tbsp olive oil
• 2 tablespoon of mustard
• 2 tbsp of balsamic vinegar
• 2 sprigs of fresh rosemary
• 1 cup of pearl onions, peeled
• 1 cup of baby carrots, left whole
• ½ lb white potatoes
• 1 cup of baby portabella mushrooms, left whole

1. Preheat the oven to 325 degrees

2. Cut about a dozen slits into the leg. Stick smashed garlic into the pockets

3. Season with salt, pepper, cumin, paprika, oregano, olive oil and balsamic vinegar. Rub the spices into the leg- making sure it is covered all over.

4. Transfer lamb into roasting pan with a few drops of olive oil. Rub mustard into the lamb. Drizzle with balsamic vinegar. Add rosemary to taste.

5. Add the onions, baby carrots and potatoes.

6. Cover with aluminum foil and place into oven for about 2.5 hours at 325 degrees or until lamb is tender. In the last 15 minutes of cooking remove the foil, add the mushrooms and finish cooking until lamb is slightly singed on the outside. Remove from oven once cooked. Slice and serve with vegetables.

Sweet Potato With Orange


• 4 large sweet potatoes
• 6 medium oranges cut into thin slices with skin
• 6 oz of maple syrup
• 19x13 Pyrex tray

1. Peel sweet potatos and boil in a large pot for 10 minutes to pre-cook. Cut into slices.

2. Slice oranges. In a large tray, assemble sweet potato first covering the bottom of the tray, layer the orange slices on top and continue this process alternating sweet potato and oranges until tray is filled. Add enough maple syrup to coat the entire casserole. Be careful not to fill the casserole dish further than half way, so as to avoid spills when it boils.

3. Cover with aluminum foil. Bake at 325 degrees for 30 minutes. After 15 minutes remove foil and place back into oven for an additional 15 minutes for a darker color.
Serves 8

Spicy Gingerbread


• 2 1/2 cups all-purpose flour
• 1 tsp cinnamon
• 1 tsp nutmeg
• 1/2 cup brown sugar
• 3.4 tsp salt
• 1 1/2 tsp baking soda
• 1 cup molasses
• 1 tsp dry ginger
• 1 egg
• 1 tsp fresh grated ginger
• 1 cup molasses
• 1 cup hot water

1. Preheat oven to 350 degrees.

2. Combine all the dry ingredients.

3. Add in egg, fresh ginger, molasses, and water.

4. Mix on low-speed for one minute and then on high-speed for about two minutes.

5. Grease and flour a 9 inch square bread pan.

6.Pour batter into pan. Bake for 55 to 60 minutes at 350 degrees. Cool in pan or wire rack.
