Healthy Convenience: Pre-Shredded Broccoli Coleslaw (such as Mann’s)
Shredded broccoli, cauliflower, carrots and red cabbage contain healthy antioxidant compounds that work to prevent diseases such as heart disease and some types of cancer.
- Quick Dinner Salad Combine prewashed, precut romaine lettuce or baby spinach with 1 1/2 cups of broccoli coleslaw. Toss with favorite low-fat vinaigrette and top with 3 ounces grilled salmon, chicken or steak. Serve with small whole-grain roll or baked potato.
- Stir-Fry Side Saute broccoli coleslaw, minced garlic and fresh-grated ginger in olive oil for 3–5 minutes. Mix with cooked brown rice. Serve as a side dish with baked chicken or fish.
