1 large cauliflower, cut into florets
1 tablespoon olive oil
1 tablespoon fennel seeds
1 teaspoon salt
1/4 teaspoon freshly ground pepper
1. Preheat the oven to 400 degrees.
2. Line a rimmed baking sheet with aluminum foil. Spread the cauliflower florets evenly on the tray, drizzle with the olive oil, and sprinkle over the fennel seeds, salt and freshly ground pepper.
3. Toss and bake for 35 minutes, shaking the pan every 10 minutes for even cooking.
Variation: Instead of fennel seeds, try 2 teaspoons curry powder or 1 tablespoon fresh rosemary.
