1 head Savoy cabbage, cored and thinly sliced, about 3 pounds
1 cup cilantro, chopped
2 jalapeños, finely chopped
1 red onion, thinly sliced into half-moons
1 lime, zested and juiced
1 orange, zested and juiced
2 tablespoons red wine vinegar
Pinch brown sugar
1 teaspoon salt
1/4 teaspoon freshly ground pepper

Add all of the ingredients together in a large bowl and toss. Let sit for 15 minutes at room temperature so flavors meld. Re-season with salt and freshly ground pepper as needed. Serve as a side dish, or as a bed for grilled meat or fish, or sausage.
