1 cup reduced-fat mayonnaise
Zest and juice of one lime
1 tablespoon cilantro, coarsely chopped
1 jalapeño, finely diced (optional)
Salt and pepper to taste
3 1/2 to 4 cups of cooked shredded chicken (meat from one rotisserie chicken)
4 taco shells
1 cup coleslaw mix

In a small bowl mix together the mayonnaise, lime zest and juice, cilantro and jalapeño if using. Season generously with salt and pepper. Add shredded chicken and stir to combine. Fill taco, and top with coleslaw mix.
